Healthy Fruit Popsicle Recipe

Time to dig out those popsicle moulds.  No longer do popsicles have to be unhealthy.  These frozen yoghurt popsicles are just that, frozen yoghurt.

The Yogurt

Plain yoghurt is what you need for the base of the pops.  You can also use Greek yoghurt which will leave you with a tangier flavour. If you are using Greek yoghurt, you will need to thin it out with a little bit of milk as it is quite thick. Next you can add about 1 teaspoon of honey per popsicle into the yoghurt. Yoghurt is high in protein and calcium.

The Berries

This is where the layer is bursting with flavour. Berries are so delicious this time of year, they are hard to ignore in the grocery store (hello, mid-summer!)

Berries are bursting with antioxidants, especially blueberries!

Yogurt Parfait Breakfast Popsicles

Makes 6 popsicles

Ingredients

  • 3 cups chopped strawberries, hulled
  • 1/4 cup sugar (or honey) for the strawberries
  • 1 cup Greek yogurt
  • 1/4 to 1/2 cup milk
  • 2 to 3 tablespoons honey
  • 3/4 cups granola

Instructions

  1. Combine the strawberries and sugar (or honey) in a small saucepan and stir gently to combine. Gently stir over a low heat until the strawberries are thick and jam like and the honey or sugar has dissolved.
  2. In a separate container, whisk together the yogurt, 1/4 cup of the milk, and 2 tablespoons of honey. The yogurt should be thick, but pourable (roughly the consistency of regular yogurt). If it is too thick, you can always whisk in a little more milk. Taste and add more honey if desired.
  3. Scoop out 1/4 cup of the yogurt mixture and stir it into the granola. This will help the granola freeze into the popsicles.
  4. Pour a generous spoonful of yogurt into the bottom of each mould. Add a scoop of granola and then a spoonful or two of strawberries.
  5. Continue layering yogurt, granola, and strawberries until your moulds are filled. Tap the moulds lightly against the counter to remove any air.
  6. Insert popsicle sticks into each mould and place the popsicles in the freezer. Freeze until solid, at least 6 hours.
  7. After waiting, enjoy!
