Green Leaf Pomegranate Salad Recipe

This Green Leaf Pomegranate Salad Recipe is delicious as a side.  It is high in fibre so is great for keeping your digestive system healthy.

Ingredients

  • 3/4 cup unsweetened pomegranate juice
  • 1 tablespoon fresh lemon juice
  • 2 extra-virgin olive oil
  • 1/2 himalayan salt
  • 1/4 teaspoon minced fresh thyme leaves
  • 1/8 teaspoon freshly ground black pepper
  • 1-2 pre packed baby spinach
  • 3/4 cup finely sliced radish heads
  • 1/2 cup pomegranate seeds
  • 1/2 cup coarsely chopped toasted hazelnuts (place in a moderate oven for a few minutes or until toasted)
  • 1 large firm-ripe pear  sliced into julienne slivers

Instructions

  1. In a small saucepan, boil the pomegranate juice until reduced to 1/4 cup, this should take about 5-6 minutes.  Take off the heat and let cool.
  2. Once the reduced juice is coil, whisk in the lemon juice, oil, salt, thyme and pepper.
  3. In a salad bowl, combine the spinach, sliced radishes, pomegranate seeds and hazelnuts, pour over the dressing and arrange the pear on the salad. 
  4. Sit back and enjoy!
