Healthy Caesar Salad Recipe

Caesar salad is often frowned upon due to its notoriously unhealthy dressing.  This healthy Caesar salad recipe is bursting with protein and healthy fats

Ingredients

For the chicken

  • 1 ½ tablespoons lemon juice
  • 1 tbsp extra virgin olive oil
  • 2 tsp fresh thyme leaves
  • 1 crushed garlic clove
  • 4 organic or certified free range chicken breast fillets

For the croutons

  • 1 thick slice wholemeal bread
  • Olive oil

For the salad and dressing

  • 1 clove chopped garlic
  • 1 tsp Dijon mustard
  • ½ tsp Worcestershire sauce (you can purchase an organic sauce that will not contain unhealthy additives
  • 1 tbs lemon juice
  • 4 anchovy fillets (optional)
  • 3 tbsp mayonnaide
  • 4 tbsp plain yoghurt
  • 1 head romain or cos lettuce
  • Rocket leaves
  • Half a block of parmesan cheese

Instructions

  1. Combine the lemon juice, oil, thyme and garlic in a shallow dish and add in the chicken making sure it is well covered with the marinade.  Leave the chicken in the fridge for 2 hours. 
  2. Cube the bread and then fry in a bit of olive oil until golden and crisp. 
  3. Blend the garlic, mustard, Worcestershire sauce, lemon juice and anchovies if you are using until smooth.  Add the mayonnaise and yoghurt and blend again. 
  4. Heat a griddle pan and cook the chicken until cooked through – about 10-15 mins.  Once cooked, remove and set aside for 5 minutes and then slice.
