Rice and Chicken Recipe
This healthy rice and chicken recipe is as easy as pie to make! Bursting with flavours and nutrients, it will make a great dinner or lunch.
Serves 1 - For 2 people simply double the recipe
- ½ cup cooked Quinoa
- Handful Kale
- 1 piece of chicken - leg, breast or thigh are OK
- ½ red Capsicum
- ½ red Onion
- Handful baby spinach
- Cherry tomatoes
- 1 tsp Lemon juice
- 1 tsp Olive oil
- 1 tsp Tahini
- 1 tablespoon water
Cook to quinoa according to the instructions on the package.
Sprinkle a dash of lemon juice and olive oil and a pinch of salt over the chicken.
Slice the onion, capsicum and spread on a lined baking tray alongside the chicken. Roast for 20 minutes.
Keep checking the vegetables, you may need to take them out first if they are ready before the chicken.
While that is roasting, steam the kale until bright green. This will only take a few minutes.
When all is cooked, place all the ingredients in a bowl. To make the sauce, combine all ingredients.
