These super-easy-to-make bars are a staple in my fridge. Loaded with protein, good fats, antioxidants and so much yumminess, they make the perfect little treat. Hemp seeds and activated buckwheat are available at some health stores.

Ingredients

  • 1 cup pumpkin seeds
  • 1 cup desiccated coconut
  • 1 cup hemp seeds
  • ¼ cup flaxseeds
  • ¼ cup sesame seeds
  • 10 Medjool dates, pitted
  • ¼ cup raw cacao powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla essence
  • 1/3 cup melted coconut oil
  • 1/3 cup activated buckwheat

Method

  1. Place the pumpkin seeds, desiccated coconut, hemp seeds, chia seeds and flaxseeds in a food processor and pulse (do not over process, you want some crunch). Place in a mixing bowl and set aside.
  2. Place the dates, cacao powder, cinnamon and vanilla essence into a food processor and process for about 30 seconds. Add the coconut oil and process just enough to combine. Add this mixture to the mixing bowl, and then add in the activated buckwheat.
  3. Using your hands, thoroughly combine to get an even mix (you will need to press the mix together well to ensure that the wet and dry ingredients combine well).
  4. Line a glass/ceramic dish (roughly 25 x 25 cm) with baking paper. Add in the mix and using your hands, spread it evenly across the dish. Press down first with your fingers and with the bottom of a measuring cup (this works well to get a nice flat finish).
  5. Refrigerate for about 30 minutes.
  6. Using a non-serrated knife, cut into bars of desired size. Individually wrap in a little baking paper and store in an airtight glass container in the fridge for around a week.
