Gluten Free Chocolate Chip Cookies Recipe

A chocolate chip cookie can satisfy your sweet tooth craving, in moderation, how about gluten free? To make it even healthier, you can use slivered almonds as an addition.

These delectable cookies are filled with all things wholesome and nourishing.  This recipe is very simple and fun to make.  These cookies are perfect to pack in a school lunch box (minus the slivered almonds), or to take to work for a quick and wholesome morning or afternoon snack.

What's Great About These Cookies

Oats are a great source of soluble fibre.  Fibre is important to keep your gut healthy and regular.  It is also important for maintaining healthy cholesterol levels as well as reducing your LDL. "Oatmeal contains soluble fibre, which reduces your low-density lipoprotein (LDL), the "bad" cholesterol."

If you are using dark chocolate chips, you will be getting the added magnesium, iron, copper, manganese, riboflavin and antioxidants.  All these minerals are important for maintaining health. Cacao is a great source of theobromine that boosts endorphins and increases mental alertness.

Ingredients

  • 2 cups organic rolled oats
  • 50 g flaked or desiccated coconut
  • 60 g melted butter
  • 60 g raw honey, organic maple syrup or rice syrup
  • 1 organic egg
  • 100 g block good quality 70% dark chocolate or dark chocolate chips

Instructions

  1. Preheat your oven to 150 C.
  2. Combine oats, coconut, melted butter, honey (or whichever sweetener you are using) and egg into a mixing bowl.
  3. Mix through with your hands for a few minutes, until the cookie starts to come together.
  4. If using a chocolate block, break into small pieces.
  5. Add chocolate to the oats and mix through.
  6. Using a teaspoon, form into 12 cookies
  7. Place onto a lined baking tray and flatten slightly with the back of a fork
  8. Bake for about 20 minutes or until golden.
  9. Remove from the oven and cool completely. Enjoy.

Note: This recipe is not for those with coeliac disease due to the oats.  Oats can be tolerated for most with gluten intolerance.
