Peaches would have to be a favourite summer fruit, so during the season you indulge. During the end of the season, they are not looking their finest, so this is the best time for a peach cook up.

As the weather gets colder, nothing beats a baked dessert with warm sweet fruit and a crumbly, crunchy topping.
The humble crumble is a well-known dessert based on the goodness of fruit, however with added not so good and nutritious ingredients.
This crumble still contains sugar, but the difference is the other ingredients are contain nutritional benefits.

  •     The fruit is left with its skin on which provides more fibre
  •     The flour is spelt.  Spelt is a good source of iron, protein and zinc.

  • 8 peaches
  • 2 tablespoons maple syrup
  • ½ teaspoon cinnamon
  • 2 tablespoons butter (for griddle pan)
  • 225g melted butter
  • 1 cup rolled oats
  • 1 teaspoon cinnamon
  • ½ cups spelt flour
  • 3/4 cups raw sugar or coconut sugar


  • Wash and slice the peaches. Melt butter on a griddle pan over moderate heat and add the sliced peaches on a single layer.  Drizzle over the maple syrup and cinnamon and grill until soft, about 5-10 minutes.  Take off the heat and set aside.
  • To make the crumble, place the flour, sugar, cinnamon, oats and butter in a large bowl and mix until just combined.
  • Spoon the crumble mixture over the peach and place the dish on a large baking tray.  Bake for 40-45 minutes or until golden brown.  You can serve with ice cream or cream.


  •     You can use peaches and pears, apples and pears, nectarines and apples, plums and apples, plums and nectarines…the combinations are endless.
  •      Frozen berries can also be used.
  •     Add 2 tablespoons of chia seeds to the crumble mixture to add fibre, protein, iron and omega 3’s.
  •     Use honey to sweeten the dish instead of sugar.
