Both Allergies and Intolerance are sensitivity to a particular food, which provokes an immune response. An allergy is usually obvious and fairly immediate, whereas intolerance can be much more difficult to identify, and the symptoms can occur hours or possible even days afterward.

Where you aware that 35% of the population have an intolerance to gluten, but only 1% has Coeliac disease? Many individuals suffer from NCGS, ie. Non-coeliac gluten sensitivity, but may not even realise it. Others recognise that they simply feel better when they don’t eat gluten. In actual fact no one can physically digest gluten, but for the large majority if passes through without consequence. For some others gluten intolerance can be linked to a large range of other conditions.
