5 Healthy Summer Grilling Tips

Summer is coming up and this is the time for grilling and barbecuing.  From the north to the south, backyard barbecuing is the Aussie icon.  But, it doesn't have to be unhealthy.  In fact, the BBQ is very often just the opposite.  With a little preparation, simple burgers can become elaborate, healthy meals.

The Big Clean

Before starting your BBQ, use a wire brush to give your grill a good clean. To make sure there are no grill cleaning bristles left on the bbq, you can wipe it down with a thick cloth.  It is easier to clean your bbq when it is hot.  Once you are finished cooking, scrape again.

Get it Hot

Preheat your grill at least 15-25 minutes before you begin your cooking to make sure it kills any bacteria and it reaches the right temperature.

Smoke and Fire

Open flames can create heterocyclic amines.  This happens when fat drips and burns on the grill, resulting in smoke containing polycyclic aromatic hydrocarbons.  These two chemicals combined can be health toxic.  In order to reduce the formation of heterocyclic amines and polycyclic aromatic hydrocarbons you can:

  • Line the grill with foil which has been perforated with holes
  • Cook on your BBQ for longer at a lower temperature
  • It is a good idea to have a spray bottle with water to spray when you have flare-ups

Marinade

Marinating your food before you BBQ them will add extra flavour.  You can make your own or if you choose to buy bottled marinate, choose ones that are low in sugar and salt with no trans fats.

Fruit and vegetables

Barbecuing intensifies the flavour of your fruits and vegetables, as it does your meat.  A great way to get in those veges and fruit is to make kebabs alternating with meat.  Or you can make eggplant alternating with tomato and mushroom.
