Healthy Balsamic Plum Ice Cream Recipe

There is nothing more refreshing than ice cream when the weather is hot and summertime is in full swing.  For this delicious summer dessert all you need is balsamic vinegar, a hint of cardamom, plums but alas no noisy ice cream maker This delectable, creamy, flavourful, tangy and sweet plum ice cream is courtesy of the Unconventional Baker.

Plums are extremely nutritious with a variety of nutrition benefits.

  • Rich in Vitamin C. Plums are a good source of vitamin C, as each small fruit contains 7 percent of the daily suggested intake. Vitamin C is an antioxidant, so it can help protect your cells from free radical damage. Vitamin C also helps produce carnitine, norepinephrine and collagen.
  • Rich in Vitamin A.  Plums also contain vitamin A, and a small fruit provides about 8 percent of the recommended daily intake. Vitamin A promotes healthy vision, reproduction and bone growth, among other benefits.

Plum Nutrition Facts and Benefits

Ingredients

Plum Mixture:

  • 9 med-small plums, halved and de-stoned
  • 1/2 cup maple syrup
  • 1/4 cup balsamic vinegar
  • 1 tbsp tapioca powder

Ice Cream Mixture:

  • 1 cup cashews, pre-soaked and strained
  • 1 cup unsweetened dairy-free yogurt
  • 1/2 cup maple syrup
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1/8 tsp ground cardamom

Instructions

  1. Combine all plum mixture ingredients in a medium-small sauce pan and bring to a light boil on medium-high heat. Once the mixture begins to bubble continue simmering for 10 mins, stirring occasionally. Remove from heat and cool on a wire rack until mixture is at room temp.
  2. Combine all ice cream mixture ingredients as well as the cooled plum mixture in a high speed blender and blend until smooth (use your tamper if using a Vitamix to get smoothest results).
  3. Transfer into a container of your choice and chill for 5-6 hours or overnight. Thaw out on the counter before serving and enjoy!
