Quinoa Porridge with Berries Recipe

Recipes Quinoa is a recently rediscovered ancient grain and is becoming more and more common in the kitchen.  When cooked, it has a slightly crunchy texture and nutty flavour that is filled with nutrients.  Quinoa is a complete protein which means it provided all the amino acids needed to make one full protein.  It is important for tissue repair and growth as it high in the amino acid lysine.

Quinoa has the added benefit of being gluten free.

Berries, as well as containing important vitamins and minerals, are a well known antioxidant which means they fight off free radicals therefore protecting our cells from oxidative damage.

Ingredients

  • 1 cup quinoa rinsed under cold water

  • 2 cups milk (milk alternatives such as rice, oat, soy, almond can also be used)

  • ¼ tsp vanilla extract

  • Cinnamon

  • Berries (Handful)

  • Maple syrup

Method

Place the quinoa, vanilla extract and milk in a saucepan.  Bring to a simmer, uncovered, and stir occasionally for 15 minutes until the grains are tender.  Throw in the berries and sprinkle with maple syrup and cinnamon.
