These are the cookies that keep on giving! Egg free, high in protein and suitable for vegan vegetarians.

Ingredients

  • 130 grams of almond meal
  • 2 tablespoons of melted coconut oil
  • 30 grams of cacao nibs
  • 2 tablespoons of maple syrup
  • 1 tablespoon of vanilla extract
  • ¼ teaspoon of sea salt flakes
  • ¼ teaspoon of baking powder

Method

  • Preheat oven to 170C / 340F
  • Combine all ingredients in a bowl and mix to a batter
  • On a lined baking tray, roll out 1 tablespoon of batter and press lightly in the centre
  • Bake for 13 – 15 minutes


Note: They will be soft when removed from the oven but will firm as they cool. The cookie centres will stay soft and fudgey when cool.

Tip: If you prefer a a crunchy cookie, place back in the over for another 3 – 5 minutes.
