You've just walked in the door from a frenetic and frenzied day at work and your family is hungry – what do you do? Take out, convenience foods?  Instead of opting for greater convenience, try making a quick and easy home cooked meal - but what are some good dinner time ideas?  It is easier and quicker than you think and believe it or not, you will find all the ingredients you need in your fridge, freezer and pantry.

The following is a list of 3 easy and healthy recipe ideas that you can prepare using only the most basic of ingredients.  These recipes are wholesome and nutritious.

Wholegrain Pasta with Tomatoes and Vegetables

Ingredients

  • 1 onion, diced
  • 1 clove garlic, diced
  • 1 can tomato, diced
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp basil
  • 1 can corn
  • frozen veges like capsicum, peas, etc.
  • cooked pasta
  • ricotta or grated parmesan

Instructions

  1. Sauté 1 diced onion and 1 diced garlic cloves in olive oil until translucent.
  2. Add a can of diced tomatoes.
  3. Add a teaspoon of oregano, garlic and basil to your tomato sauce, stir in a can of corn and some frozen veges such as diced capsicum, peas. Simmer for about 5 minutes.
  4. Once cooked, spoon over cooked pasta and top with ricotta or a bit of grated parmesan cheese.

Sautéed Mixed Vegetables Over Brown Rice

Ingredients

  • mixed veges of your choice
  • olive oil
  • brown rice
  • soy sauce
  • tamari
  • teriyaki sauce

Instructions

  1. Sautee chopped fresh, canned or frozen vegetables in some olive oil until tender.
  2. Cook the rice according to package instructions.
  3. To make your sauce, mix equal parts water with soy, tamari or teriyaki sauce.
  4. Toss the sauce with the vegetables and serve over the rice.

Whole Wheat Tuna Casserole

Ingredients

  • pasta
  • 2 cans tuna
  • 2 cans cream of celery soup
  • milk
  • parsley
  • salt & pepper
  • minced garlic
  • grated cheese of your choice
  • mixed veges of your choice

Instructions

  1. Cook pasta as per directed on the package.
  2. Combine 2 cans tuna with 2 cans cream of celery soup and a splash of milk.  Season with parsley, salt pepper and some minced garlic.
  3. Stir in chopped fresh, canned or frozen vegetables.
  4. Add the cooked pasta to the sauce and transfer to a large casserole dish.
  5. Sprinkle with some grated cheese and bake for around 30 minutes until warm and golden brown.
